While we typically think of tofu as a main-course dish, tofu can also be used in a variety of savory dips and sauces and family-style side dishes as well! Firm or extra-firm tofu is best for meaty tofu dishes but would you be surprised to know that silken tofu can be used in a variety of dips, sauces, and dressings? Silken tofu makes a creamy base for potato salad and creamy corn casserole. And medium and or soft tofu works well for for ricotta stuffed shells.
