This vegan chocolate lava mug cake delivers that warm, molten center without the fuss, the oven, or a pan you’ll regret washing later. It’s a true five-minute recipe for one, which makes it perfect for late-night chocolate cravings or those moments when brownies feel like too much commitment.

Yes, I'm a dessert fanatic! But chocolate dessert holds a special place in my heart. It's seen me through all the emotions over all the the years lol! But honestly I don't always want to invest the time, effort, or calories in a half-sheet cake size chocolate picnic cake. Nor even a a pan of my famous rocky road brownies.   • unsweetened cocoa powder
  • granulated sugar
  • baking powder
  • pinch of salt
  • plant-based milk of choice. It’s best to use unsweetened milk. The chocolate mug cake is plenty sweet by itself. I’ve used oat milk and soy milk for this recipe.
  • neutral tasting vegetable oil – Avocado oil is my neutral oil of choice.
  • vanilla extract
  • one-half ounce vegan chocolate chips or one small square or two of vegan chocolate – (Hint, hint, chocolate bar works best.)

The Best Vegan Chocolate to Use

Use about ½ ounce of chocolate for the molten center. If you’re using chocolate chips, that’s roughly 4 teaspoons. With a vegan chocolate bar, it’s even easier — just break off a small square or two. Precision isn’t critical here; being slightly over or under won’t hurt the final result.

Step One – Mix the Dry Ingredients

In a microwave-safe mug, whisk together the flour, cocoa powder, sugar, baking powder, and salt until evenly combined.

Use a 10-12 ounce microwave-safe mug for best results. My mug size of preference is ten-ounces.

The batter itself fills the mug about halfway, which leaves enough room for the cake to rise as it cooks without spilling over. Anything smaller risks overflow; anything larger spreads the batter too thin and reduces the lava effect.

After you’ve made these a time or two (and you will want to make more!), you’ll know how long your microwave will take. Mine takes exactly 55 seconds each time.
