Preheat the oven to 350 degrees. Grease the baking dish with extra butter .
Chop the onion and celery and set aside. Chop the apples and keep separate from the onions and celery.

Add the vegan butter, celery and onions to a skillet and cook over medium-high heat for a few minutes, until tender.

Add the cooked vegetables, broth, cubed stuffing/bread, chopped apples, dried cranberries rosemary, thyme, sage, and pepper to a large bowl. Fold to combine. Take a little nibble and adjust with salt and more pepper to taste.
12 oz package cubed stuffing mix, 3 cups vegetable broth, 2 med apples, ¾ cup dried cranberries, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, 1 teaspoon dried sage, ¼ teaspoon pepper
Pour the mixture into a prepared 9×13 baking dish and bake for 30-40 minutes, until golden.
