- Preheat the oven to 350 degrees. Grease the baking dish with extra butter .
- Chop the onion and celery and set aside. Chop the apples and keep separate from the onions and celery.3 stalks of celery, 1 medium onion, 2 med apples
- Add the vegan butter, celery and onions to a skillet and cook over medium-high heat for a few minutes, until tender.3 Tablespoon vegan butter, 3 stalks of celery, 1 medium onion
- Add the cooked vegetables, broth, cubed stuffing/bread, chopped apples, dried cranberries rosemary, thyme, sage, and pepper to a large bowl. Fold to combine. Take a little nibble and adjust with salt and more pepper to taste.12 oz package cubed stuffing mix, 3 cups vegetable broth, 2 med apples, ¾ cup dried cranberries, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, 1 teaspoon dried sage, ¼ teaspoon pepper
- Pour the mixture into a prepared 9×13 baking dish and bake for 30-40 minutes, until golden.
Notes
Use a vegan-friendly stuffing mix
See the blog post above for suggestions about which apples to use. I love Granny Smith or Pink Ladies; but any snappy apple that holds up well in baking will do.
Use either vegetable broth - or for a more authentic flavor, use a vegan "chicken" broth like Better than Bouillon no-chicken broth.
Use a vegan stick butt4r that you enjoy the floor of because it will come through.
If you are vegetarian then use dairy butter if that is your choice.
