Brown Sugar Sweet Potato Praline Boats

These individual brown sugar sweet potato praline boats are an elegant side dish for your special occasion dinner and are easily made plant-based with vegan compliant ingredients. They are made with sweet potatoes, brown sugar, vegan butter, pecans, flour, and vegan marshmallows.

Ingredients
  

  • 3 sweet potatoes
  • 1/3 cup brown sugar packed
  • ¾ cup chopped pecans
  • 3 Tablespoons flour
  • 3 Tablespoons butter vegan
  • 1/8 cup mini marshmallows Dandies brand

Method
 

  1. Preheat oven to 400°
  2. Wash and score - or poke the sweet potatoes with a fork.
  3. Bake for 40 minutes or until tender when you pinch them. Take them out to cool slightly, leaving them in the baking pan. Do not turn off the oven.
  4. While sweet potatoes are cooling, you can prepare the praline topping.
  5. Melt butter in microwave and chop pecans.
  6. Mix together the melted butter, brown sugar, and flour. Add in and continue mixing the pecans. Set aside.
  7. The sweet potaotes should be cool enough to handle now. Cut a slit in the top of each and pinch to open.
  8. For a finished look, fold down and tuck the edges of the skins where you cut the slit.
  9. Fluff the baked sweet potatoes with a fork.
  10. Add in the praline topping and return to the oven for 15 minutes.
  11. If you desire to add marshmallows on top, only do so the last 5 minutes of baking.
