Light, airy, and ready in minutes — these three-ingredient Bisquick Sprite Pancakes might be the easiest breakfast you’ll ever make. The secret? A splash of Sprite (or ginger ale!) gives the batter lift and sweetness, turning a pantry staple into something irresistibly fluffy and fun.
Heat the griddle to 350℉. Measure out the Bisquick mix into a medium-sized bowl. Add the sprite and water. Gently stir.
Once the griddle has heated up, melt a small amount of vegan butter on the griddle. Portion out one-fourth cup of the prepared mixture onto the griddle. Depending on the size of your griddle, you can get up to six pancakes on each batch.
Allow to cook until the edges look a little dry and bubbles have formed on the top of the pancakes. This will take about three minutes. You can take a peek to see if the bottom of the pancake is nice and brown. Use a pancake turner to flip each pancake and cook for another couple of minutes until both sides are as done as you'd like.
