Ingredients

  • 6 cherry tomatoes
  • 2 slices hearty bread Whole grain or sourdough holds up best to the toppings.
  • 1 small garlic clove You'll be rubbing the toast with it. Not chopping.
  • 1 ripe avocado
  • ½ teaspoon lemon juice
  • Salt and pepper to taste – Don’t skip; they make the flavors pop.
  • ¼ cup microgreens
  • 1 tablespoon pepitas
  • ½ teaspoon sesame seeds
  • Drizzle of balsamic glaze

Instructions

  • Cut the cherry tomatoes and set aside.

  • Toast your bread until it’s golden and sturdy enough to hold toppings. Remove the paper from the garlic clove. Cut in half and rub the surface lightly with a cut clove of garlic while still warm for a subtle savory base.

  • While the bread is toasting, prep the avocado mixture. In a small bowl, mash the avocado with lemon juice, salt, and pepper. You want some texture — not a smooth puree — for that rustic café feel.

  • Assemble the toast. Spread the mashed avocado mixture evenly on the toast. Layer the cherry tomato halves and sprinkle with microgreens.

  • Top with pepitas, sesame seeds, and a gentle drizzle of balsamic glaze. Serve immediately while the toast is crisp.

Notes

For an elevated brunch feel, finish with a few flakes of sea salt or a tiny drizzle of olive oil.
The salt and pepper are not calculated in the nutrition facts because they are both to taste. 
Also, the sodium will differ depending on if you use salted pepitas or unsalted . 
I assume one person would be eating both pieces. If you share with your sunday morning bestie  and only have one piece, change the nutrition accordingly. 
I planned on one avocado for two slices of bread. In an ideal world, we'd have a perfect avocado every time we opened one up! However...grab an extra or two just in case. Especially if this is a special occasion avocado toast!
