Quinoa Salad with Artichoke Heart
This quinoa salad with artichoke hearts is quick and easy to throw together. It is kid friendly and works well in school lunch boxes.
- 1 cup quinoa precooked
- 1 7 ounce jar artichoke hearts chopped
- 1/2 teaspoon lemon
- Italian seasoning to taste
Drain and chop the artichoke hearts.
Add to quinoa along with lemon juice. If the artichokes are not marinated in seasoning, add a little Italian seasoning to taste.
