Ingredients
½cupcoconut cream
¾cupoat milk
¼cuporange juice concentratethe frozen kind - do not dilute
3½Tablespoonsinstant vanilla pudding
2Tablespoonssugar
1teaspoonvanilla extract
Instructions
Skim one-half cup of coconut cream from the top of a can of coconut milk. I used full-fat coconut milk for a richer flavor and texture I add and mix directly into a 2-cup measuring cup.
Add the oat milk, orange juice concentrate, instant vanilla pudding mix (dry - not mixed), sugar, and vanilla extract. Whisk together.
Pour into a Nina Creami pint container and freeze for 24 hours. See notes below if you are using a different device.
After 24 hours take it out of the freezer and process according to the manufacturer's directions using the "ice cream" setting.
If the finished product is dry, powdery, or has little frozen balls on top, your freezer might have been too cold. Reprocess using the "re-spin" setting.
Notes
If you are using a different device other than the Ninja Creami, Blend the ingredients in a blender and process according to the manufacturer's directions for your device.
