These vegan mug brownies are rich and fudgy and delicious. They are super quick and easy to make. Just mix a few ingredients, microwave, and you have a brownie!

Ingredients

Dry Ingredients

  • 3 Tablespoons flour
  • Tablespoons brown sugar packed
  • 2 Tablespoons cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt use less if desired
  • 2 Tablespoon vegan chocolate chips more for sprinkling on top

Wet Ingredients

  • 4 Tablespoons plant milk of choice
  • 3/4 teaspoon white vinegar
  • 1/2 teaspoon vanilla extract
  • 2 ½ Tablespoons vegetable oil like melted coconut, avocado, or corn

Instructions

  • In a 12-14 ounce microwave-safe mug, mix together dry ingredients: flour, brown sugar, cocoa powder, ground cinnamon, salt, vegan chocolate chips. Set aside
  • In a separate small bowl, measure out the plant milk. Pour the vinegar and vanilla into it and then the oil.
  • Give the liquids a stir and pour all at once into the mug with dry ingredients. Mix well, ensuring the dry ingredients from the bottom of the mug are well incorporated.
  • Put in a microwave. Microwave times will vary. Heat on high for about 90 seconds till the top is no longer shiny and wet. If you need to microwave longer, do it in 10-second increments.
  • Allow cooling slightly before eating. Top with sprinkles, or vegan vanilla ice cream.

Notes

Special Note:
The ingredients were developed for one single serving size - or one mug. If you want to batch prepare the dry ingredients for six brownie mugs at a time follow these ingredient amounts:
1 cup plus 2 Tablespoons flour
3/4 cup plus 3 Tablespoons brown sugar
3/4 cup cocoa powder
1 1/2 teaspoon ground cinnamon
1 1/2 teaspoon salt
Mix all together into a mixing bowl.
You will need 3/4 cup chocolate chips BUT - Hold off on the chocolate chips till the dry ingredients are measured out in the mugs and add 2 Tablespoons to each of the 6 mugs. If you mix the chips in all at once with the dry ingredients, they will sink to the bottom of the bowl  and not distribute evenly into each mug. 
IMPORTANT - you will measure out 1/2 cup dry mix for each cup one at a time BUT you will take out 1 teaspoon. This is the exact amount needed for each mug - 1/2 cup less 1 teaspoon.
One teaspoon might seem trivial - but ingredients for this individual-sized brownie mug were developed for exactly this proportion. 
NOW add in the 2 Tablespoons chocolate chips and mix together. 
The wet ingredients are the same as above as they will be mixed and  added to each cup separately.
