Not only is this grilled cheese quick and easy to make, but it's also extra fancy too! Made with herbed mayo you make with your favorite vegan mayo and dried herbs.

Equipment

  • elelctric grill or grill pan

Ingredients

Herbed Vegan Mayo

  • 2 Tablespoons mayo vegan
  • 1/2 teaspoon herbs de provence or other herbs of choice I like tarragon
  • 1 Tablespoon nutritional yeast

The Sandwich

  • 2 slices bread extra large slices like a "country loaf"
  • 1 Tablespoon vegan butter, softened or use tub butter
  • 3 slices cheese vegan - I use two different flavors

Instructions

  • MIx together the herbed mayo by adding the dried herbs and nutritional yeast. set aside for a few minutes so that the herbs can soften.
  • Butter one slice of bread and put it buttered side down on the grill.
  • Put half the mayo on that slice and top with the three slices of cheese, placing as evenly as possible and layering when necessary.
  • Spread the rest of the mayo on the other slice. Top the sandwich and then butter the top.
  • Grill on medium for about 5 minutes, checking to make sure it doesn't burn.
  • Flip and continue grilling the other side. If the cheese has not melted by the time the bread is toasted enough, put a lid on the top for a couple of minutes to retain the heat and melt the cheese.
