So refreshing on a warm summer day with citrus juice, vodka, limoncello, coconut water, and champagne. Made with a rosemary citrus simple syrup you make yourself.

Ingredients

Rosemary Citrus Simple Syrup for One (See notes below)

  • 1 sprig fresh rosemary
  • 2 Tablespoons sugar
  • 4 Tablespoons orange juice (about 1 orange)
  • 3 Tablespoons lemon juice (about 1 lemon)
  • 1 teaspoon orange zest

Champagne Cocktail

  • Rosemary Citrus Simple Syrup (see above)
  • 1 ounce vodka 2 Tablespoons
  • 1 ounce limoncello 2 Tablespoons
  • 1 ounce coconut water 2 Tablespoons
  • 2 ounces champagne 1/4 cup
  • ice for glass
  • orange slices and rosemary sprigs for garnish

Instructions

Rosemary Citrus Simple Syrup (One serving - see notes below)

  • Add rosemary sprig, sugar, orange zest, orange and lemon juices to a saucepan. Stir together and bring to a boil.
  • Reduce to a simmer, cover, and continue simmering for 5 minutes.
  • Remove from heat, strain, and let cool for about 10 minutes.

Champagne Cocktail

  • Pour the vodka, limoncello and coconut water into a glass over ice. Stir to combine.
  • Add the champagne to the other vodka/limoncello/coconut water mixture.
  • Add the simple syrup. If this is the first time you've made this cocktail, start with half and taste for sweetness. You can always add more but it will be impossible to take away!
  • garnish with an orange slice and rosemary sprig.

Notes

I like to chill my alcohol before so that the drink is not watered down when poured over ice.
The simple syrup recipe is for one cocktail. To make enough for 4-6 cocktails:
  • 4 sprigs of rosemary
  • 1/2 cup sugar
  • 1 cup orange juice
  • 3/4 cup lemon juice
  • 4 teaspoons orange zest (1 Tablespoon plus 1 teaspoon)
The left-over simple syrup should keep for about three weeks, tightly covered in the refrigerator.
