– ½ cup Old Fashioned oats – 1 Tablespoon brown sugar – ⅓ cup oat milk – 2 Tablespoons vegan yogurt or sour cream – 1 teaspoon vanilla extract – ½ teaspoon baking powder – 2 teaspoons monk fruit packets – 1 pinch salt – 3 Tablespoons vegan chocolate chips

1. Preheat oven to 375° Spray an individual baking dish or ramekin with cooking spray.


2. Add all ingredients except for the chocolate chips to a blender. Add the oats, brown sugar, oat milk, vegan yogurt, vanilla extract, baking powder, a pinch of salt, and sweetener to the blender.


3. Blend until smooth – 20-30 seconds.


4. Pour the mixture into the prepared ramekin. Gently stir in 2 Tablespoons of the chocolate chips.


5. Sprinkle the remaining one Tablespoon of chocolate chips on top. Don't stir in.


6. Bake for 15-20 minutes. It should be baked on top but the center will be a little bit soft – it won't be as firm as if you were making a cake. The center is much softer when baked for 15 minutes – and I prefer it that way. 20 minutes makes it more cake-like.


7. Allow cooling for 10 minutes before eating. The outside of the baking dish will be hot to handle so take caution.
