Quinoa Salad with Artichoke Hearts

Quinoa Salad with Artichoke HeartsThis quinoa salad with artichoke hearts it so easy to throw together, it’s almost embarrassing to call it a recipe! It is vegan and plant-based. Flavor with a little lemon juice and Italian seasonings, and that’s it.

I developed it to go in my back-to-school lunch box project. Kids are not usually willing to try strong flavors, so this is a perfect little cold salad to try in their lunch boxes.

precooked rice I use ready to serve quinoa I buy at the store. You can make your own if you’d like. I find this just one more step I don’t have to think about.

Just what is quinoa? This high in protein, gluten-free grain became a little trendy a few years ago. I remember the first time I excitedly told a co-worker about this great dish I tried at a restaurant. I pronounced it just like it’s spelled though. Go ahead and look at it, then pronounce it that way and laugh at me! She was kind enough to correct me with a gentle “I think it’s pronounced KEEN-wah.” Oh the shame…

Quinoa has been called an ancient grain but it’s actually a seed. It’s high in fiber and is a powerhouse of nutrients. When you cook it, it has a funny little curl like a tail that pops out of it. That’s how you know it’s done. (See, I do cook things – I just don’t always have time for it!)

Quinoa Salad with Artichoke HeartsI also use jarred artichokes. Make sure that you get the kind that are marinated in a little seasoning. If they aren’t seasoned, then  you will need to sprinkle in some Italian seasonings. Just drain the artichokes and chop up. Toss with the precooked quinoa, add a little lemon and you are done! You have a quick and easy quinoa salad.

Ingredients

  • 1 cup quinoa precooked
  • 1 7 ounce jar artichoke hearts chopped
  • 1/2 teaspoon lemon
  • Italian seasoning to taste

Instructions

  • Drain and chop the artichoke hearts.
  • Add to quinoa along with lemon juice.  If the artichokes are not marinated in seasoning, add a little Italian seasoning to taste.
